Rich Chocolate Rum Balls Using Cake Crumbs

A rich and chocolatey treat which is so simple to make. You could even use pieces of left over cake!

Ingredients
  

  • 1 chocolate cake packet mix 350g
  • 3/4 can condensed milk
  • 1 tbsp coffee granules dissolved in 1/4 cup hot water
  • 1/3 cup rum
  • 350 g white chocolate melted

Instructions
 

  • Prepare cake according to packet directions. Once baked and cooled, process the mixture into fine crumbs.
  • In a large bowl, place the cake crumbs, condensed milk, coffee, rum and mix well. Mixture should be slightly sticky.
  • Place mixture in the fridge, covered for approx 1 hour or until quite chilled.
  • Using a wet teaspoon, scoop small amounts of mixture and roll it in the palm of your hand forming a ball. Drop each ball into the melted chocolate and coat thoroughly using a spoon to help you.
  • Use a skewer to poke the centre of each ball and place on a tray (lined with baking paper).
  • Leave in the fridge to set for at least 2 hours before transferring to an air tight container.

Notes

Add more or less condensed milk depending; mixture should be sticky but still fairly firm.
When rolling the mixture, try to work as quickly as possible to prevent it becoming very sticky.
When removing the rum balls from the melted chocolate mixture after coating, twist skewer holding it horizontally to prevent chocolate from dripping.
These rum balls can last for up to 3 weeks in the freezer!
