Healthy Delicious Nut Bars
Healthy homemade delicious Bars! I enjoy 2 squares a day for an afternoon snack. Also great to take on the go! Use your favourite selection of nuts, 3 cups in total! I enjoy the combo listed below. Great with a cup of tea at 4pm in the afternoon!
Ingredients
- 1 1/4 Cup Raw Almonds Partially Chopped
- 1 1/4 Cup Cashews Partially Chopped
- 1/4 Cup Walnuts Chopped
- 1/4 Cup Pecans Chopped
- 1/2 Cup Coconut Flakes
- 1 T Desiccated Coconut
- 1 T Chia Seeds
- 1/4 Cup Pumpkin Seeds
- 1/4 Cup Currants
- 1/4 tsp salt
- 1 tsp Vanilla extract
- 1/2 Cup Maple Syrup
Instructions
- Preheat oven to 150 fan forced and line a 19cmx28cm tin tray with baking paper (hanging over sides).
- In a large Mixing bowl add the dry ingredients; almonds, cashews, pecans, walnuts, coconut, chia seeds, pumpkin seeds, currants and salt.
- Combine the vanilla and maple syrup in a separate container.
- Add syrup mixture to bowl and quickly mix it all through.
- Transfer to lined baking tray and smooth flat with the back of a spoon.
- Place in oven for 35 minutes or until golden brown.
- Leave to cool (and I mean completely cool) or your mixture will fall apart when slicing.
- Once cooled, turn out onto chopping board, peel off baking paper and slice into squares or bars. Store in air tight container in the fridge.
