Preheat oven to 150 fan forced and line a 19cmx28cm tin tray with baking paper (hanging over sides).
In a large Mixing bowl add the dry ingredients; almonds, cashews, pecans, walnuts, coconut, chia seeds, pumpkin seeds, currants and salt.
Combine the vanilla and maple syrup in a separate container.
Add syrup mixture to bowl and quickly mix it all through.
Transfer to lined baking tray and smooth flat with the back of a spoon.
Place in oven for 35 minutes or until golden brown.
Leave to cool (and I mean completely cool) or your mixture will fall apart when slicing.
Once cooled, turn out onto chopping board, peel off baking paper and slice into squares or bars. Store in air tight container in the fridge.
