Creamy Basil Pesto Pasta

A delicious pasta with beef, corn and mushrooms mixed together with a creamy pesto flavoured sauce.

Ingredients
  

  • 400 g pasta spirals
  • 1 tin corn
  • 1 tin mushrooms sliced
  • 1 tub sourcream
  • 300 g beef fillet
  • 1 1/2 tbsp basil pesto
  • Salt
  • Pepper

Instructions
 

  • Cook pasta according to packet instructions in some salted water. Drain and set aside.
  • Heat a medium frying pan adding a little oil. Crack some salt and pepper over both sides of the beef. Place the beef in the frying pan and cook for approx 5-7 minutes on each side. Remove from the pan once cooked and leave to rest for another 10 minutes. Slice into thin strips.
  • In a large saucepan, add the sourcream, corn, mushrooms, pesto and beef. Heat on low heat for 5 minutes stirring to mix well. Turn off heat.
  • Add the pasta to the saucepan and mix well with the sauce.

Notes

Garnish with pesto leaves, finely chopped. Sprinkle over the pasta before serving.
