Creamy Basil Pesto Pasta
A delicious pasta with beef, corn and mushrooms mixed together with a creamy pesto flavoured sauce.
Ingredients
- 400 g pasta spirals
- 1 tin corn
- 1 tin mushrooms sliced
- 1 tub sourcream
- 300 g beef fillet
- 1 1/2 tbsp basil pesto
- Salt
- Pepper
Instructions
- Cook pasta according to packet instructions in some salted water. Drain and set aside.
- Heat a medium frying pan adding a little oil. Crack some salt and pepper over both sides of the beef. Place the beef in the frying pan and cook for approx 5-7 minutes on each side. Remove from the pan once cooked and leave to rest for another 10 minutes. Slice into thin strips.
- In a large saucepan, add the sourcream, corn, mushrooms, pesto and beef. Heat on low heat for 5 minutes stirring to mix well. Turn off heat.
- Add the pasta to the saucepan and mix well with the sauce.
Notes
Garnish with pesto leaves, finely chopped. Sprinkle over the pasta before serving.
