Cook pasta according to packet instructions in some salted water. Drain and set aside.

Heat a medium frying pan adding a little oil. Crack some salt and pepper over both sides of the beef. Place the beef in the frying pan and cook for approx 5-7 minutes on each side. Remove from the pan once cooked and leave to rest for another 10 minutes. Slice into thin strips.

In a large saucepan, add the sourcream, corn, mushrooms, pesto and beef. Heat on low heat for 5 minutes stirring to mix well. Turn off heat.

Add the pasta to the saucepan and mix well with the sauce.
