Creamy Basil Pesto Pasta

A delicious pasta with beef, corn and mushrooms mixed together with a creamy pesto flavoured sauce.

Ingredients
  

  • 400 g pasta spirals
  • 1 tin corn
  • 1 tin mushrooms sliced
  • 1 tub sourcream
  • 300 g beef fillet
  • 1 1/2 tbsp basil pesto
  • Salt
  • Pepper

Method
 

  1. Cook pasta according to packet instructions in some salted water. Drain and set aside.
  2. Heat a medium frying pan adding a little oil. Crack some salt and pepper over both sides of the beef. Place the beef in the frying pan and cook for approx 5-7 minutes on each side. Remove from the pan once cooked and leave to rest for another 10 minutes. Slice into thin strips.
  3. In a large saucepan, add the sourcream, corn, mushrooms, pesto and beef. Heat on low heat for 5 minutes stirring to mix well. Turn off heat.
  4. Add the pasta to the saucepan and mix well with the sauce.

Notes

Garnish with pesto leaves, finely chopped. Sprinkle over the pasta before serving.
