An easy delicious family meal.
Bacon, Corn & Spinach Quiche
Ingredients
- 125 g rindless short cut bacon
- 1 small brown onion finely diced
- 1 garlic clove crushed
- 160 g frozen spinach thawed
- 120 g frozen corn kernals thawed
- 100 g ricotta cheese or cottage cheese
- 1/2 c 40g grated Parmesan
- 5 eggs
- 1/4 cup milk of your choice
Instructions
- Preheat oven to 200oc. Lightly spray quiche dish & line base with baking paper to prevent sticking.
- In a small fry pan over medium heat cook bacon, onion & garlic stirring for 5 minutes or until bacon is golden & onion is softened.
- Squeeze excess moisture from thawed spinach. Place bacon mixture, spinach & corn in bowl & mix. Spoon mixture into prepared quiche dish.
- Whisk together eggs, cheeses, milk & salt & pepper until just combined. Pour over spinach mixture.
- Bake for 25-30 minutes or until golden & set. Stand quiche in dish for 5 minutes before cutting into wedges. Serve with a green salad or enjoy cold the next day.
