Bacon, Corn & Spinach Quiche

An easy delicious family meal.

Bacon, Corn & Spinach Quiche

Ingredients
  

  • 125 g rindless short cut bacon
  • 1 small brown onion finely diced
  • 1 garlic clove crushed
  • 160 g frozen spinach thawed
  • 120 g frozen corn kernals thawed
  • 100 g ricotta cheese or cottage cheese
  • 1/2 c 40g grated Parmesan
  • 5 eggs
  • 1/4 cup milk of your choice

Instructions
 

  • Preheat oven to 200oc. Lightly spray quiche dish & line base with baking paper to prevent sticking.
  • In a small fry pan over medium heat cook bacon, onion & garlic stirring for 5 minutes or until bacon is golden & onion is softened.
  • Squeeze excess moisture from thawed spinach. Place bacon mixture, spinach & corn in bowl & mix. Spoon mixture into prepared quiche dish.
  • Whisk together eggs, cheeses, milk & salt & pepper until just combined. Pour over spinach mixture.
  • Bake for 25-30 minutes or until golden & set. Stand quiche in dish for 5 minutes before cutting into wedges. Serve with a green salad or enjoy cold the next day.
