Preheat oven to 200oc. Lightly spray quiche dish & line base with baking paper to prevent sticking.
In a small fry pan over medium heat cook bacon, onion & garlic stirring for 5 minutes or until bacon is golden & onion is softened.
Squeeze excess moisture from thawed spinach. Place bacon mixture, spinach & corn in bowl & mix. Spoon mixture into prepared quiche dish.
Whisk together eggs, cheeses, milk & salt & pepper until just combined. Pour over spinach mixture.
Bake for 25-30 minutes or until golden & set. Stand quiche in dish for 5 minutes before cutting into wedges. Serve with a green salad or enjoy cold the next day.
