Apple Pikelets

 

These Apple Pikelets are a delicious afternoon snack and great with a cup of tea. A twist on the usual recipe. It’s amazing how much sweetness the apple gives the pikelets!

Apple Pikelets

Prep Time 35 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients
  

  • 2 eggs
  • 350 ml milk
  • 2 tablespoons caster sugar
  • 300 g self raising flour
  • 4 small eating apples
  • 50 g unsalted butter for frying
  • Powdered icing sugar for decoration

Instructions
 

  • Whisk eggs, milk and sugar together, then fold in flour. Add a pinch salt, cover, put aside for 30 minutes.
  • Peel the apples, cut in halves, de-core, and slice thinly.
  • Melt a knob of butter in a hot frying pan and add a dollop of the batter mix to form a pikelet. Lay 1 or 2 slices of apple of top of the batter then fry for a couple of minutes. Turn over and cook the other side. Repeat with rest of batter.
  • Sprinkle with powdered icing sugar and serve hot.

Notes

Great with a cup of tea! Try using banana or pear next time!
