Sundried Tomato And Cashew Dip

A simple dip to whip up for your guests. Best served with plain biscuits so you can fully appreciate its flavour!

Ingredients
  

  • 100 g sundried tomatoes drain the oil
  • 100 g salted cashew nuts
  • 1 tbsp lemon juice
  • 1/2 cup basil leaves finely chopped
  • 1 cup light sour cream
  • Sea salt to taste

Instructions
 

  • Place the sundried tomatoes, cashews, lemon juice and basil leaves in a food processor. Blend until combined.
  • Add the mixture to the sour cream and mix well using a spoon.
  • Add some sea salt to taste.
