Method
- Poach the chicken breasts according to directions. Once cooled, slice chicken finely.
- In a medium saucepan, combine the peanut butter, sweet chilli, sesame oil, soy sauce and water. Stir over medium heat until combined. Reduce to a low heat and continue to stir.
- Add the sliced chicken and cooked vegetables.
- Stir over low heat for approx 3-4 minutes. Switch off heat and leave saucepan covered for another 5 minutes before serving.
Notes
Serve with steamed rice or noodles.
