Ingredients

can condensed milk

dessert spoon grated lemon rind

lemon juice

marie biscuits crushed

butter
melted

pk cream cheese
Instructions
Crumb Crust
Crush biscuits in food processor, mix with melted butter.
Press into greased/lined dish or springform pan (20cm).
Filling
Using electric mixer, beat cheese until smooth, beat in condensed milk, lemon rind, juice and egg yolks. Pour onto crumb crust.
Topping
Whip egg whites until soft, gradually beat in sugar. Beat until stiff.
Spread evenly over filling. Bake in hot oven, 200oC for 10 minutes or until meringue is lightly brown.
Refrigerate and serve when cold.
