Method
Crumb Crust
- Crush biscuits in food processor, mix with melted butter.
- Press into greased/lined dish or springform pan (20cm).
Filling
- Using electric mixer, beat cheese until smooth, beat in condensed milk, lemon rind, juice and egg yolks. Pour onto crumb crust.
Topping
- Whip egg whites until soft, gradually beat in sugar. Beat until stiff.
- Spread evenly over filling. Bake in hot oven, 200oC for 10 minutes or until meringue is lightly brown.
- Refrigerate and serve when cold.
