Chocolate Sauce Pudding

Ingredients
  

  • 60 g butter
  • 1/2 cup milk
  • 1 cup self-raising flour
  • 1 tablespoon cocoa powder
  • 3/4 cup caster sugar
  • 1 teaspoon vanilla essence
  • Canola-oil spray
  • 3/4 cup firmly packed brown sugar
  • 1 tablespoon cocoa powder extra
  • 2 cups boiling water
  • 2 teaspoons icing sugar mixture optional

Instructions
 

  • Preheat oven to 180oC. Put large saucepan on stove, on medium heat. Add butter and milk, stir until butter is melted. Remove from heat.
  • Sift flour and cocoa into a medium bowl. Stir the caster sugar and vanilla essence into warm butter and milk mixture, add the sifted ingredients and stir to combine.
  • Spray oven proof dish with canola spray. Dish should have volume 1.5L approx. Pour chocolate mixture into dish.
  • 4. Sift brown sugar and extra cocoa powder (use a spoon to push through sugar if needed) over chocolate mixture.
  • 5. Gradually pour the boiling water over the back of a wooden spoon onto the chocolate mixture. Put the pudding into the oven and bake it for 50min or until skewer comes out clean.
  • Leave to sit for 5 minutes then sift icing sugar over the top to serve.
