Vietnamese Rice Paper Rolls
These spring rolls are really healthy and fresh tasting! Great to serve with their delicious dipping sauces!
Ingredients
- 60 g rice noodles
- 6 rice paper wrappers
- 6 large cooked prawns remove skin and cut in half
- 2 tbsp chopped fresh mint leaves
- 2 lettuce leaves chopped
Dipping Sauces
- 4 tbsp sweet chilli
- 1 tsp sesame oil
- 3 tablespoons hoisin sauce
- 1 teaspoon finely chopped roasted peanuts
Instructions
- Boil rice noodles in a medium saucepan of water for approx 4 minutes until just cooked. And cold water and drain. so that the noodles don't stick together.
- Place 1 rice paper wrapper in a medium bowl of lukewarm water until just soft. Place on a clean tea towel and pat dry uning the towel.
- Put 2 prawn halves, a handful of noodles, mint and the lettuce in a row across the centre.
- Fold in uncovered sides of wrapper, then tightly roll to enclose the filling. Repeat with remaining rolls.
Dipping Sauce 1
- In a small bowl, mix the sweet chilli sauce and sesame oil.
Dipping Sauce 2
- In a small bowl, mix the hoisin sauce and peanuts.
Notes
Serve the rice paper rolls with the sweet chilli sauce and hoisin-peanut dipping sauces.
