A quick and easy way to jazz up Christmas cake

Ingredients
  

  • Leftover Christmas cake or store bought fruit cake
  • Sherry Brandy or Orange juice (optional)
  • White chocolate buttons melted
  • Glacé cherries chopped

Instructions
 

  • Using a food processor, whizz the cake into a crumb consistency. May need to be done in batches. Place into separate bowl.
  • If mixture doesn't come together add enough of your chosen liquid (1-2 tablespoons) to bring the mixture together.
  • Roll tablespoons of cake mixture together & place on tray with grease proof paper.
  • Melt white chocolate either in microwave or bowl over hot water.
  • Spoon white chocolate on top of cake balls & place chopped glacé cherries on top.
  • Place in fridge to firm up and store in an airtight container in fridge until needed.

Notes

Note: Cake can be broken down using your hands, but mixture won't be as moist as using the food processor.
