Lemon Meringue Pie

Lemon Meringue Pie

Cook Time 10 minutes
Total Time 25 minutes

Ingredients
  

  • 400 g can condensed milk
  • 2 eggs separated
  • 1 dessert spoon grated lemon rind
  • 1/4 cup lemon juice
  • 1/2 cup caster sugar
  • 250 g marie biscuits crushed
  • 120 g butter melted
  • 250 g pk cream cheese

Instructions
 

Crumb Crust

  • Crush biscuits in food processor, mix with melted butter.
  • Press into greased/lined dish or springform pan (20cm).

Filling

  • Using electric mixer, beat cheese until smooth, beat in condensed milk, lemon rind, juice and egg yolks. Pour onto crumb crust.

Topping

  • Whip egg whites until soft, gradually beat in sugar. Beat until stiff.
  • Spread evenly over filling. Bake in hot oven, 200oC for 10 minutes or until meringue is lightly brown.
  • Refrigerate and serve when cold.
