Easy Potato Salad

 

A delicious, easy potato salad recipe. An alternative way to serve potatoes without having to do mash. Can be prepared earlier in the day for your convenience. Eat as a snack or as a side, great for the summer time.

Total Time 12 minutes

Ingredients
  

  • 3-4 medium potatoes
  • Whole egg mayonnaise
  • Sour cream
  • Salt
  • Spring Onions chopped finely.
  • Water

Instructions
 

  • Peel potatoes, and chop into quarters or sixths, if large.
  • Place in microwave safe bowl, add approximately a tablespoon of water.
  • Sprinkle salt evenly over potatoes, toss and sprinkle a little bit more (this will add the majority of flavour).
  • Cover the bowl tightly with cling wrap, leaving no air wholes and place in mircowave for 7 minutes.
  • Lift part of cling wrap, with caution! The steam will be very hot, check potatoes with skewer or fork. Potatoes should be softened and slide straight off skewer, don't cook them til they are mushy and falling apart. Allow to cool for 5 minutes.
  • Add a generous dessert spoon of both mayonnaise and sour cream and mix through, if more is needed add it in equal parts.
  • Add spring onions and toss through, can be served straight away or stored in fridge for later.

Notes

Try adding some chopped ham or red onions for a bit of variety.
