Chocolate Coconut Oil Slice
This is seriously one of my favourite slices! I eat it every day. I usually enjoy 1-2 pieces on the side of a bowl of chopped apple and handful of berries! Really curbs my chocolate cravings and I love that it has zero sugar!
Ingredients
- 250 ml Coconut Oil
- 200 g Cashew Butter Almond Butter works well too
- 1/3 Cup Monk Fruit Sweetener
- 1/3 Cup Cocoa Powder
- 1/2 Cup Coconut Flour
- 1/2 Cup Desiccated Coconut
- 1/2 Cup Chia Seeds extra for topping
- 2 T Pumpkin Seeds extra for topping
Instructions
- Melt Coconut oil and pour into large mixing bowl.
- Add cashew butter and stir. Use the back of the spoon to spread out the lumps. Small lumps are fine – they actually add a delicious little clump to the finished product.
- Add monk fruit sweetener and cocoa powder and mix.
- Add remaining ingredients and combine. Your mixture should be fairly runny. If not add more coconut oil. Taste and make adjustments if you prefer it sweeter.
- Ok stop tasting, save some for later.
- Pour into 19cm x 28cm tray, sprinkle with extra chia and pumpkin seeds.
- Place in the fridge to set for 2 hours. Then slice into squares.
- Store in an air tight container in the fridge. Enjoy! 🙂
Notes
This is a fairly flexible recipe, so there is room for adjustments. I usually eyeball it when I make it, just make sure your mixture is runny. Have a play and if it tastes good in prep then it will taste good when set! Enjoy!
