This is a delicious recipe, that Mum, Dad and the family can enjoy on a hot summers day. You can even create a little platter for the kids who may not be too keen on eating lettuce, see below!
Caesar Salad
Ingredients
- Olive oil
- 50 g Butter
- 2 bacon rashers per person
- 1-2 slices bread per person preferably frozen
- 1 egg per per person
- Parmesan cheese grated
- 'Paul Newman's Own' Creamy Caesar dressing
- Iceberg or Cos lettuce
- Salt
Instructions
- Before you start cooking decide how you want to do your eggs, boiled, fried with running yolk, or omelet style. If you would like to hard boil them. Start this now.
- Add cold water to small saucepan, add eggs in shell, when the water reaches rapid boil allow to boil for 5min and then remove from heat, empty water, keep adding cold water to pan to cool eggs.
- Meanwhile Heat oil in pan, dice bacon and add to pan.
- Using frozen bread (it slices a lot better and doesn't crumble), slice the bread in 1 x 1cm cubes.
- Remove bacon from pan, place in a bowl and cover to keep warm.
- Add 50g butter to pan and sprinkle some salt. Add bread cubes to pan to make croutons, stir to make sure they don't burn. Add more butter if necessary so your bread has no dry parts. Fry until brown and remove.
- Meanwhile prepare plates with chopped or torn lettuce on them. Approxiately 1/4 of iceberg lettuce should be enough per person. Grate cheese.
- Remove croutons from pan, add to bowl covering bacon to keep warm. (Don't cover or croutons will go soggy).
- Fry eggs or make omelet. (if you chose not to boil, otherwise peel your eggs.)
- Place croutons and bacon onto prepared lettuce, sprinkle with cheese.
- If you chose to boil your eggs - slice into fifths and place strategically over salad. For omelet style - slice into strips and sprinkle over salad. For fried - simply place straight on top of cheese.
- Finally drizzle dressing over salad to your taste.
Notes
Try adding some roast chicken for a little something extra!
