Mix up your usual cooking routine with this delicious vegetarian Singapore noodles recipe!

- Place noodles into a glass bowl, cover with boiling water. Allow to sit for 5-10minutes for noodles to soften.
- Heat half oil in pan, beat eggs, add to pan allow to cook omelet style. Remove and chop into thin slices.
- Heat remaining oil, add garlic, onion, curry powder and stock, stir fry for about a minute or until fragrant.
- Slice pak choy into medium pieces and add to pan. Chop leaves off at set aside.
- Add carrot, capsicum and corn to pan, stir fry for 2 minutes.
- Add noodles, sauces, leaves of pak choy and sliced omlete, mix through, although sauce to thicken and serve.
Notes
Mix and match the vegetables you chose to add. Try adding prawns, snow peas or spring onions!
