Nachos with quick and delicious Salsa is an easy lunch and delicious treat for family!
Nachos with easy Delicious Salsa & Guacamole
Ingredients
- 1 small onion
- 1 clove of garlic
- 1 tablespoon olive oil
- 425 g can chopped tomatoes
- 420 g can mixed beans
- 1 tablespoon sweet chilli sauce or to taste
- 240 g packet corn chips
- 1 cup grated cheese
- 1 large avocado
- 1/4 cup natural yogurt
- 1 tablespoon lemon juice
Instructions
- Preheat Oven to 200oC
- Heat oil in medium pan, add finely chopped onion and crushed garlic to pan.
- When onion softens add tin of tomatoes with their juice, add drained beans and sweet chilli sauce. Stir and simmer for 10 min or until mixture thickens slightly.
- Spread corn chips on oven proof dish, pour mixture over chips. Sprinkle with grated cheese, and place in oven to cook for 10min or until cheese melts.
- Meanwhile, spoon the avocado roughly into a small bowl, mash with a fork. Add yogurt and lemon juice to bowl and beat with a fork until smooth consistency.
- Remove Nacho's from oven and add a few dollops of guacamole on top. Serve.
Notes
Best only make as much as you will eat in one sitting, bean mixture can be stored in the fridge for use the next day.
