Homemade Muesli Bars
Making your own muesli bars are so simple and CHEAP! Great for the kids' lunchboxes!
Ingredients
- 3/4 cup honey
- 1/4 cup brown sugar
- 50 g butter
- 3 cups untoasted rolled oats
- 1 cup sultanas
- 1/4 cup small chocolate chips
- 1/4 cup dessicated coconut
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 180C and line a slice pan with baking paper.
- In a suacepan, combine the honey, sugar and butter over medium heat. Continue stirring until butter melts and sugar dissolves. (Approx 5 mins)
- Bring to the boil and cook for 2 minutes - you will notice the syrup thickening slightly. Remove from heat.
- In a large bowl, combine the muesli, sultanas, chocolate chips, dessicated coconut and cinnamon.
- Pour the hot syrup over the dry mixture and stir to combine.
- Spoon into pan and press gently with the back of a spatula (oil the spatula to prevent mixture sticking).
- Bake in oven for 30 minutes or until golden brown and crisp. Remove from oven and set aside in the pan to cool completely.
Notes
Drizzle with more chocolate or add your own dried fruit for variety.
