A really simple way to make homemade honeycomb. Using golden syrup. Make it in 5 minutes!
Homemade Honeycomb
Ingredients
- 1 cup white sugar
- 3 tablespoon water
- 1/4 cup golden syrup
- 2 tsp bicarbonate soda
- Cool glass of water
Instructions
- Grease a slice tin (30cm x 20cm) with butter and set aside.
- In a small saucepan, place sugar and water over a medium heat until the sugar is dissolved. Add golden syrup and stir it through.
- Bring sugar, syrup and water to the boil and simmer for approximately 5 minutes. You will know it is ready by taking a droplet of mixture and placing it into a glass of cold water. If the droplet changes into a hard ball, once cooled. The mixture is ready for the bicarbonate soda to be added. If it is only soft and squishy, continue boiling - but keep checking!
- Place your slice tin close to the stove and remove the saucepan from the heat. Add the bicarbonate soda to the saucepan mixing it in quickly. It will froth up, tripling its size.
- Immediately pour hot mixture into the slice tin and leave to cool.
- Once completely cool, slide knife around edges to loosen it, then smash the honeycomb or break it into pieces.
- If you live in a warm climate store in fridge, so that it stays crunchy oppose to chewy, in an airtight container.
Notes
Be careful to used a nicer brand of golden syrup. I used the brand "csr" and it worked well. Home brand didn't work.
