Giant Choc Chip Cookies double in size while cooking! Fun for kids and delicious!

Chocolate Chip Cookies

Ingredients
  

  • 2 eggs
  • 1 cup firmly packed brown sugar
  • 1 cup plain flour
  • 3/4 cup self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup vegetable oil
  • 1 cup milk chocolate melts halved
  • 1/2 cup white chocolate bits

Instructions
 

  • Preheat oven to 200oC. Grease to oven proof trays and set aside.
  • In a large mixing bowl beat eggs and sugar until light brown.
  • Sift both flours and bicarbonate soda over egg mixture.
  • Add oil and chocolate melts and mix through.
  • Spoon out mixture, roll into a ball and press flat onto trays. Be conscious of size, these cookies will double in size!
  • Bake for 10 minutes or until cookies are lightly browned.
  • Let stand for 5 minutes then move cookies to cooling wrack, allow to cool before storing.

Notes

For an alternative try adding 1 cup roasted nuts into mixture.
Tip: Choose a nice brand of chocolate chips to enhance the flavour!
