Giant Choc Chip Cookies double in size while cooking! Fun for kids and delicious!

Chocolate Chip Cookies

Ingredients
  

  • 2 eggs
  • 1 cup firmly packed brown sugar
  • 1 cup plain flour
  • 3/4 cup self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup vegetable oil
  • 1 cup milk chocolate melts halved
  • 1/2 cup white chocolate bits

Method
 

  1. Preheat oven to 200oC. Grease to oven proof trays and set aside.
  2. In a large mixing bowl beat eggs and sugar until light brown.
  3. Sift both flours and bicarbonate soda over egg mixture.
  4. Add oil and chocolate melts and mix through.
  5. Spoon out mixture, roll into a ball and press flat onto trays. Be conscious of size, these cookies will double in size!
  6. Bake for 10 minutes or until cookies are lightly browned.
  7. Let stand for 5 minutes then move cookies to cooling wrack, allow to cool before storing.

Notes

For an alternative try adding 1 cup roasted nuts into mixture.
Tip: Choose a nice brand of chocolate chips to enhance the flavour!
