Easy Quiche

 

Tasty, easy quiche! Great recipe for when you forgot to defrost some meat in the morning! Throw it together at the last minute!

Easy Quiche

Prep Time 15 minutes
Cook Time 40 minutes

Ingredients
  

  • 5 eggs beaten
  • 3/4 cup diced green and red capsicum
  • 1/2 onion finely chopped
  • 4 rashes bacon or ham
  • 1/2 cup grated cheese
  • 1/2 cup cream or milk
  • 1 sheet shortcut pastry
  • salt and pepper to taste.
  • Slices of tomato optional

Instructions
 

  • Preheat oven to 180oC. While waiting for pastry to defrost, chop bacon and onion.
  • Spray oven proof dish and press pastry in firmly, cover with baking paper and pour some uncooked rice over paper to weigh the paper down, place in oven to partially cook for 10minutes.
  • Fry bacon and onion in pan.
  • Meanwhile beat eggs in medium bowl, add salt and pepper to your taste.
  • Chop capsicum and grate cheese and add to mixture.
  • Add milk/cream to mixture.
  • Add bacon and onion to mixture. Combine all ingredients.
  • Remove pastry from oven, remove baking paper and rice (i usually store this rice in a jar to use as a weight next time)
  • Pour mixture into pastry dish, using oven mitts place quiche back into oven to cook for a further 40min, or until lightly browned. If you like you may put extra cheese on top or slices of tomato before cooking.

Notes

If you don't have any pastry in the house just add 1/2 cup flour to mixture and forget pastry all together, still tastes delicious!
